Who I am Matters in Our Work

I am a bilingual Nicaraguan American Registered Dietitian Nutritionist (RDN) who understands that food is more than just ‘fuel.’ Food is connection, memory, and resistance. As someone who works within a liberatory framework, I am committed to constantly unlearning the patriarchal and white-supremacist standards of the wellness industry. Whether you are navigating a new diagnosis, seeking gender-affirming support, or reclaiming your body from diet culture, I am here to walk alongside you, not as a superior, but as a partner.

To ensure I can provide the highest level of care for complex needs, I have spent more than 12 years training in medical nutrition therapy (MNT) and unlearning traditional restrictive models that do more harm than help support long-term mental and physical well-being. I also continuously seek evidenced-based science grounded in models that foundationally use social-determinants of health, trauma informed care, and client-centered approaches.

For a long time, the world of nutrition has felt like a room with a very narrow door. If you didn't fit a certain body type, eat a certain way, or make efforts to assimilate, you were often left outside—or worse—shamed once you got in.

I created Plato Unida Nutrition™ to break that door down. My path to becoming a RDN wasn't just about learning the science of the human body; it was about realizing science is incomplete if it doesn't account for a person's humanity. Whether I am working with a client living with HIV, someone navigating the complexities of gender-affirming care, or a fellow member of the Latine community looking to honor their heritage, my intentions are the same: to provide care that makes you feel seen, safe, and supported.

Clinical Specialization in HIV/AIDS:

I provide high-level MNT to support immune & metabolic stability. This ensures long-term survivors and those newly diagnosed has someone on their healthcare team who understands the science without the stigma.

Bilingual Clinical Care:

Offering services in both English and Spanish is my way of ensuring that language is never a barrier to receiving the life-enhancing nutrition care you deserve.

Weigh-Neutral & Liberatory Frameworks:

I have dedicated my career to unlearning the weight-centric traditional models that cause harm, focusing instead on Body Trust and the Social Determinants of Health.
